Perfect for lunchboxes, cookie swaps, or cozy nights in.
Makes about 24 cookies.
DIRECTIONS:
- Preheat oven to 350°F. Melt 1/2 cup of butter and set aside to cool but not solidify (about 10-15 minutes)
- Peel and dice 1 medium apple to create 1 cup of diced apple. Options: replace apple with 1 cup of raisins, chocolate chips, or use no additions at all
- In a large bowl, add the contents of this bag, 1/2 cup of melted (but cooled) butter, 1 egg and 1 tbsp milk. Stir until combined. Then mix in diced apples
- Line two baking sheets with parchment paper. To form cookies, scoop approx. 1.5 tablespoons of dough and roll into a ball with your hands (will be approx. 1.25 inches tall). Place on the baking sheet about 3 inches apart
- Bake for 12-13 minutes. Do not overbake (the center may not look fully baked but a toothpick will come out clean)
- Let cookies set on baking sheet for 10 minutes (this is important!) before moving to a wire rack to finish cooling. Best served warm!
